Tarte aux Pommes Normande

Ingredients

  • For the Pastry:
    • 1 1/4 cups all-purpose flour
    • 1/2 cup unsalted butter, chilled and diced
    • 1/4 cup sugar
    • 1 egg yolk
    • A pinch of salt
  • For the Filling:
    • 4-5 large apples, peeled, cored, and sliced
    • 1/4 cup sugar
    • 1 tsp ground cinnamon
    • 1 tbsp unsalted butter
  • For the Custard:
    • 1 cup heavy cream
    • 2 eggs
    • 1/3 cup sugar
    • 1 tsp vanilla extract

Instructions

  1. Prepare the Pastry:
    • In a large bowl, mix flour and salt. Add butter and rub into the flour until it resembles coarse breadcrumbs.
    • Stir in sugar, add egg yolk, and mix until a dough forms. Wrap in cling film and chill for 30 minutes.
  2. Prepare the Apples:
    • Preheat the oven to 375°F (190°C).
    • In a pan, melt butter over medium heat. Add apples, sugar, and cinnamon. Cook until apples are just softened, about 7 minutes. Let cool.
  3. Assemble the Tart:
    • Roll out the pastry on a floured surface and line a 9-inch tart pan. Prick the base with a fork.
    • Arrange the cooked apples in the pastry shell.
  4. Make the Custard:
    • Whisk together cream, eggs, sugar, and vanilla extract. Pour this mixture over the apples.
  5. Bake the Tart:
    • Bake for 35-40 minutes, until the custard is set and the pastry is golden.
    • Let cool before serving.
