Instructions

  1. Prepare the Veal:
    • Place veal, onion, carrots, leeks, and bouquet garni in a large pot. Cover with water, season with salt, and bring to a boil. Skim off any foam that rises to the surface.
  2. Cook the Veal:
    • Reduce heat and simmer gently for 1.5 hours, or until the veal is tender.
  3. Make the Sauce:
