Ingredients

For the Pastry:

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup butter, chilled and diced
  • 3-4 tbsp cold water

For the Filling:

  • 8 slices bacon, chopped
  • 1 medium onion, finely chopped
  • 4 large eggs
  • 1 1/2 cups heavy cream
  • 1/4 tsp nutmeg
  • Salt and pepper, to taste
  • 1 cup grated Gruyère or Swiss cheese

Instructions

  1. Prepare the Pastry: In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for at least 30 minutes.
  2. Cook the Bacon and Onion: In a skillet, cook bacon over medium heat until crisp. Remove bacon and set aside. In the same skillet, cook onion until translucent.
  3. Preheat Oven and Prep Crust: Preheat oven to 375°F (190°C). Roll out the pastry on a floured surface and place it in a 9-inch pie plate. Trim and crimp the edges.
  4. Combine Filling: In a bowl, whisk together eggs, heavy cream, nutmeg, salt, and pepper. Stir in the cooked bacon, onion, and grated cheese.
  5. Assemble and Bake: Pour the filling into the crust. Bake for 35-40 minutes, until the quiche is set and the crust is golden brown.
