- 3 pounds rooster, cut into pieces

- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 4 ounces bacon, chopped
- 1 large onion, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 2 cups red wine (Burgundy or Pinot Noir)
- 2 cups chicken stock
- 2 tablespoons tomato paste
- 1 bouquet garni (thyme, parsley, and bay leaf)
- 8 ounces mushrooms, quartered
- 2 tablespoons butter
- Fresh parsley, for garnish
