Creamy chicken is a classic comfort food that is perfect for a weeknight meal. This recipe is easy to make and uses simple ingredients that you probably already have on hand.
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 tablespoon chopped fresh parsley
Instructions:
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until golden brown on both sides and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion and garlic, cooking until the onion is translucent.
- Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
- Stir in the heavy cream, Dijon mustard, and thyme, bringing the mixture to a simmer.
- Return the chicken to the skillet, coating it in the sauce, and cook for a further 5 minutes until the sauce has thickened slightly.
- Garnish with chopped parsley before serving.
Serve with a side of buttered rice, vegetables, or your choice of accompaniment. Enjoy your meal!
